I love my green smoothies and have one almost every day. Whether I make a smoothie in the morning (after a cup or two of coffee) or reach for one of these delicious drinks in the afternoon when I need a little pick-me-up, they always give me the boost of energy and nutritious goodness I need to get going. With so many flavor possibilities, the combination of ingredients that could be blended into a green smoothie are endless.
During the summer, I am always dreaming of an island getaway and this tropical green smoothie recipe is the closest thing that will get me to the sand in between my toes while basking in the sun’s rays (with sunscreen on, of course).
The protein found in Greek yogurt will help keep you fuller longer and is a key ingredient when making smoothies as part of a meal. The creaminess of the coconut milk and the freshness of the mint, finished with a zing from the lime makes this smoothie recipe a favorite in my household. I hope you enjoy this Lime in the Coconut Green Smoothie as much as I do!
- ½ mango, roughly chopped
- ¼ c. fresh mint leaves (small handful)
- 1 frozen banana
- Handful of spinach
- *zest or the juice of 1 lime
- ½ c. coconut Greek yogurt (one individual container)
- ½ c. coconut milk (or milk of choice)
- Blend mint leaves, spinach, lime juice, and coconut milk until well incorporated
- Add the rest of the ingredients and blend until smooth
*I personally prefer fresh lime juice, but you can substitute lime zest for an extra zing of flavor and convenience!
To save time, prepare the smoothie ingredients ahead of time by placing the first four (or five if using lime zest) ingredients in a Ziploc bag and freeze. If using lime juice – you can juice the limes ahead of time and store in the refrigerator until ready for use. Then, when you’re ready to whip up this delicious and refreshing smoothie, all you have to do is dump the ingredients into the blender and go!
